  Ingredients   - 2 cups basmati rice    - 1 cup jackfruit, ripe and unripe pieces   - 1 cup mixed vegetables like carrots, peas, beans   - 1 large onion, thinly sliced   - 1 tomato, finely chopped    - 1/2 cup yogurt   - 1/4 cup mint leaves   - 1/4 cup coriander leaves   - 4 tablespoons ghee   - 2 tablespoons oil    - 1 tablespoons ginger-garlic     - Whole spices : 2 bay leaves, 4 cloves, 4 green cardamom pods, 2-inch cinnamon stick   - Biryani masala: 1 teaspoon cumin powder, 1 teaspoon coriander powder, 1/2 teaspoon garam masala    - Salt to taste   Step 1 :       Rinse Basmati rice until the water runs clear. Vegetable Biryani for Beginners

EASY VEGETABLE BRIYANI FOR BEGINNERS 


Hey, foodie friends! I am here again with a new dish today, that is vegetable biryani or pulao lets get deep into the preparation. Today  we're diving deep to the world of  aromatic spices with twisted colorful vegetables to satisfy your taste buds . Prefect for beginners so, tie your apron, grab your ingredients, and lets get cooking.


Ingredients:

1. Basmati rice 

2. Mixed vegetables (carrots, peas, beans, potatoes) - 1 cup 

3. Onions, thinly sliced - 2 cups

4. Tomatoes, chopped -2 cups 

5. Ginger-garlic paste - 1 tablespoon

6. Biryani Masala - 2 tablespoons 

7. Red chili powder - 1 teaspoon 

8. Turmeric powder - 1/2 teaspoon

9. Garam masala - 1 teaspoon 

10. Cashews and raisins - a handful 

11. Fresh coriander leaves, chopped - a handful 

12. Fresh mint leaves, chopped - a handful 




Procedure :

1. Preparation of Basmati rice :

  -To make vegetable biryani wash the basmati rice thoroughly and soak it in water for about 30 minutes.

  - Cook the rice until it's 70-80 % done. Each grain should be separate. Set aside.


2. Sauteing the vegetables:

  - In a large pan, heat oil and ghee. Saute sliced onion until golden brown. 


  - Add ginger and garlic paste and cook until the raw smell disappears.

  - Toss in the mixed vegetables and cook until they are slightly tender.

   


 3. Creating the Masala Base :

   - Add chopped tomatoes, biryani masala, red chili powder, turmeric powder, and garam masala.

   - Cook until the tomatoes are soft and the oil starts to separate. 


4. Layering the Vegetable Biryani :

  - In a separate heavy-bottomed pan, layer half of the partially cooked rice. 

  - Spread a layer of the prepared vegetables, masala on top of the rice. 

  - Sprinkle some chopped coriander leaves and mint leaves. 

  - Repeat the layers, finish with a layer of rice on top. 




5. Final Touch To Vegetable Biryani :

  - Drizzle yogurt evenly over the layered rice and masala.

  - Garnish with cashews, raisins, and a few saffron-soaked strands in warm milk.


6. Dum Cooking :

  - seal the pan with a tight-fitting lid or aluminum foil. Cook on low heat for 20-25 minutes.

  - This dum cooking process allows the flavors to meld and the rice to absorb the aromatic essence of the spices. 


7. Severing tips :

  - Gently fluff the biryani with a fork, mixing the layers.

  - Serve hot, garnished with more fresh coriander leaves and mint leaves.
