Shahi Tofu Kofta

Ingredients :

 - 250g firm tofu, crumbled 
 
 - 1 cup cashews, soaked

 - 2 large onions, finely chopped

 - 3 tomatoes, pureed 
  
 - 1/2 cup fresh cream

 - 1/4 cup ghee

 -1/4 cup cooking oil 

 - 2 tablespoons ginger and garlic paste       
 - 1 teaspoon garam masala 

 - 1 teaspoon garam masala 

 - 1 teaspoon turmeric powder

 - 1 teaspoon cumin powder 

 - 1 teaspoon coriander powder

 - salt to taste 

 -  Fresh coriander leaves for garnish

     

Procedure :

Step 1 : Crafting tofu dumplings 

  Begin by crumbing the firm tofu, blending it with a pinch of turmeric, cumin powder, salt. Shape into small koftas, ensuring each one is a miniature work of art.

  Heat a mix of ghee and cooking oil on a medium flame. Gently place the tofu koftas, allowing them to achieve a golden brown hue. This process takes approximately 10 minutes. Once golden, set the koftas aside.

Step 2 : Cashew Cream

       In the same pan, add finely chopped onions and saute until they transform into a caramelized symphony. Meanwhile, blend soaked cashews into a velvety cream.     

   Now add the ginger and garlic paste to the caramelized onions, letting waltz in the aromatic smell. Pour in the cashew cream, creating a celestial blend. Allow this majestic mixture to simmer on a medium flame for 15 minutes, stirring occasionally.
